This PR adds a script that set ups tests (using our Docker stack) for stable releases.
It's based on https://github.com/ibexa/ci-scripts/blob/main/bin/4.2.x-dev/prepare_project_edition.sh , but things were simplified - because we don't need dependency handling etc. in this case.
